  2. I spent 7 months traveling the Pacific alone with backpack surfing just out of high school in '78. This included 3 months in AU.. The canned beetroots in hamburgers were VERY difficult for me.. even the remaining juice from them gave me a little gag.. Just as much an acquired taste as Vegimite and Marmite.. both good for a bit of a gag too.. I can eat anything but those are tough. I made a pact with myself that I would eat everything served to me and clean the plate for the trip.. garnish and all. I alway broke that for beetroot.. but I did learn fast to order them sans beetroot.. Just saying!! Proof in the pudding: Here I am eating a bi-valve shipworm in Papua / Irian Jaya with local tribe members.. 118,000 views on Youtube "Bizarre Foods got nothing on me baby!" LOL

I know we have some Dizzy Pig fans here, so took one for the team and shlepped it over to the new Dizzy Pig World HQ today, which is 11 miles from my house as the crow flies, or 30 minutes drive time. Mad Max of turkey fame greeted me at the door and proudly showed off the new space, which is immense relative to the old. They now have areas in the showroom for various BBQ items, many of which are on my list of preferred brands: the entire Dizzy Pig line (of course), Blues Hog, Fruita Wood in bulk, Fogo and Rockwood charcoals, Thermoworks, Yeti, and a complete line of products associated with some oddly egg shaped green grills. Really happy to find a ready supply of Fruita. Yeah, I know they ship for free, but it's nice to be able to buy just what you'll need and not store a bunch of wood. Today was buy four get Mad Max free day, so replenished some of my go tos and picked up some Mole to boot. That mole is pretty awesome. Dreaming up some plans for that. Here's today's haul.

  7. I think it's best to put the stone on the upper grate.. better for taking advantage of the heat coming off the lid/ceiling and easier to take off with your peel..

  15. Octopus used to be one of my favorites until a buddy of mine had an octopus for a pet. Those octopi are some kind of SMART! I got kind of attached to the little guy. Now I can't eat 'em. Beautiful cook, @Pascalpro! Kudos.

  27. Dennis, I have to ask why you are going with the small fluid bed roaster instead of a small drum roaster? You can put probes and a computer on the drum to see what you are doing or you can buy a drum roaster with all that stuff on it. I added insulation to this drum shell but it is not necessary to get this roaster going. It is a Quest M3 made in Taiwan, comes in either 120V or 240V models.   29. When I was in high school, I worked in a pizza joint as head pizza man. I guess I retained some of what I was taught. The first time I made pizza for my wife, I threw the dough in the air and spread flour all over the kitchen. She put the brakes on the dough toss, lol! Sent from my SM-N920V using Tapatalk

  30. Another experiment today. I bought a bag of crispy frozen fries and a bag of onion rings. I normally do not buy these things as I have never liked them but I thought perhaps the air fryer might work.This was just a test cook and I put the fries and onion rings in at the same time and still frozen. Set the fryer for 400F for 8 mins. Shook them a about 3 times and then added 2 more mins to the cook time bringing that to a total of 10 mins. at 400 F and no added fat. Here they are- They were very good and I can see that I'll be visiting the frozen food section more often. Both were crispy and tasty as hard as that maybe to believe.

  31. But, the 1st assumption to that is, you gotta like beets. I will eat them on rare occasion, but not a big fan, especially the pickled ones. Bad memories from childhood and Mom putting the pickled ones on the salad.
