  1. My 17 year old daughter returned from China last week and has been craving Asian food since. Out for sushi Friday night. Tonight it was Yam Neua. This month's issue of Milk Street featured a recipe for Yam Neua, so here we go. Start by thinly slicing a shallot and marinate in freshly squeezed lime juice. I rubbed the skirt steak with a blend of kosher salt, white pepper, and brown sugar. Idea is to get a nice char while keeping the inside medium rare. High heat, low grate, and a bit of sugar are the keys. Here we are charring the outside. Pardon the somewhat gratuitous video, but some folks at Amazing Ribs have asked for more videos of the KK's in action. Must keep the fans happy. Resting. The char is perfect. And we nailed the medium rare. Add fish sauce, red pepper flakes, tomatoes, Cilantro, mint and, of course, that wonderfully charred steak. Delicious! Big bold flavors and the char provided great flavor and texture.

  2. This is a recipe from Ken Forkish. My pizza experimenting days are over but this recipe got posted on the Guru. I trust the cooking ability of the person who posted it so I though I would give it a try. Nice thin and crispy crust. I cooked them in the Blackstone Pizza Oven at 500* dome thermometer for about 3 minutes. Pepperoni. Mushrooms and black olives. Sausage and green peppers. Fresh sliced tomatoes and jalapeños.

Similar to Charles, my pantry door rack is actually 6 levels - the top is for bags of dried chile peppers, 2nd is for packages of spices/spice blends/salad dressing mixes, 3 & 4 are BBQ rubs, 5 is more dried spices, and 6 is cleaning products/furniture polish and rags. Not to mention a box on the floor full of Lane's rubs and a plastic tub with Food Saver packs of other rubs (I like to buy in bulk, then sub-divide into 4 oz packs to preserve freshness - like I sent to Aussie). And, this isn't the full inventory in the pantry & kitchen cabinets either. I won't even list all the different kinds of salt that I have! Obsessive - Not Me!!!

  8. Charles, I have seen a number of your pizza cooks. I have been buying my pizza dough at Trader Joe's because it is so convenient. It is cheap too. I do want to try your King Arthur no knead dough. That looks really easy.

  18. @ Tony- I found this in a document from the Dr. OZ show- Regarded as a sacred healing food by many civilizations, including the ancient Egyptians, crude or virgin red palm fruit oil should be regarded as one of the most nutritious edible oils in the world. It is not to be confused with palm kernel oil. It is derived from the fruit of the oil palm tree (Elaeis guineensis) and is referred to as "red palm oil" because of its rich dark red color in its unprocessed natural state. Palm kernel oil is derived from the seed or the kernel. Whether it’s olive, coconut, almond, canola, peanut, safflower, walnut, or even avocado oil – none compare to the powerful nutritional virtues of virgin organic red palm fruit oil. Palm fruit oil contains mainly palmitic and oleic acids and is about 50% saturated, while palm kernel oil contains mainly lauric acid and is more than 89% saturated. The health benefits are only achieved due to the red color of the palm fruit oil that is attributed to its high content of carotenes, which include beta-carotene and lycopene. These powerhouse antioxidant nutrients are the same ones that give tomatoes and carrots and other fruits and vegetables their rich red and orange colors. What may shock you is that red palm fruit oil contains more that tomatoes or carrots. Red palm fruit oil is also densely packed with numerous tocotrienols – a powerful form of vitamin E. This maybe why you think think palm oil is unhealthy- Processed palm oil does not contain cholesterol and behaves like hydrogenated fats (the dangerous trans-fatty acids) in packaged foods since it has “thickness” at room temperature. This makes it ideal for many food manufacturers to use in place of hydrogenated oils in their snack products. Processed foods can then be advertised as being "trans fat free" and "cholesterol free”. But, when red palm oil is refined and processed, the red color disappears and its nutritional and healing benefits are destroyed. Once it becomes part of a processed snack food, it no longer features the health benefits and powerful antioxidants found only in the raw palm oil.

I know we have some Dizzy Pig fans here, so took one for the team and shlepped it over to the new Dizzy Pig World HQ today, which is 11 miles from my house as the crow flies, or 30 minutes drive time. Mad Max of turkey fame greeted me at the door and proudly showed off the new space, which is immense relative to the old. They now have areas in the showroom for various BBQ items, many of which are on my list of preferred brands: the entire Dizzy Pig line (of course), Blues Hog, Fruita Wood in bulk, Fogo and Rockwood charcoals, Thermoworks, Yeti, and a complete line of products associated with some oddly egg shaped green grills. Really happy to find a ready supply of Fruita. Yeah, I know they ship for free, but it's nice to be able to buy just what you'll need and not store a bunch of wood. Today was buy four get Mad Max free day, so replenished some of my go tos and picked up some Mole to boot. That mole is pretty awesome. Dreaming up some plans for that. Here's today's haul.

  21. I have had the T-Fal and I really loved it when I first got it but then I bought a Philips air fryer and I finally gave my T-Fal away. Right now I have a Philips air fryer a cooks essential air fryer with rotisserie, and also an XL pro. Needless to say I really like Air fryers LOL Mac; Phillips makes a flat grill pan that slips into the Philips air fryer. You take the basket out and put the grill pan in instead. That might be something you want to look into it would be a lot easier to flip your sandwiches. I can send you a picture what it looks like if you want me too.

  25. I spent 7 months traveling the Pacific alone with backpack surfing just out of high school in '78. This included 3 months in AU.. The canned beetroots in hamburgers were VERY difficult for me.. even the remaining juice from them gave me a little gag.. Just as much an acquired taste as Vegimite and Marmite.. both good for a bit of a gag too.. I can eat anything but those are tough. I made a pact with myself that I would eat everything served to me and clean the plate for the trip.. garnish and all. I alway broke that for beetroot.. but I did learn fast to order them sans beetroot.. Just saying!! Proof in the pudding: Here I am eating a bi-valve shipworm in Papua / Irian Jaya with local tribe members.. 118,000 views on Youtube "Bizarre Foods got nothing on me baby!" LOL
