  10. Should we have a "I want to order" spot In lieu of automated ordering abilities online, do we think it would be helpful to have a dedicated spot on the forum for this? I am not sure if it would be more efficient for dennis and his brother to manage versus email and PMs...thinking outloud...
  11. Nice Work Nice Work Dennis. On the latch...too lazy to go and look...can we easily replace the old setup with the new branded one? I thought it was cast in???
  12. Nice flame war and RJ history lesson over at the POSK site under the newssection. RJ even shares design lessons! Hurry up and check it out before the posts fall off like POSK tiles.
  13. and the rub is used when I think you forgot tell us when to use the rub. I am guessing either in the cream cheese mixture or last on the sausage
  14. Man that hurts not the knife or country folklore stories about killing some hatfields or some other such ramblings but that steak!!!! Man, my favorite cut and it looks cooked to perfection!! Well done! (errrr. medium rare rather)
  15. OK PC - I'll bite Your reasons for fat down? Do you score the fat layer? I did 4 butts, 2 spatchcocked chickens and 3 racks of babybacks all on Saturday/Saturday Night. I overcooked the ribs by staying at the neighborhood pool about 2 hours too long but everything else was wonderful and yes I have a freezer full of leftovers and gifts for the neighbors.
  16. Prices and When will Tony Have them? Dennis, We also need prices for the accessories and need to know when Tony will have some stateside. Mr. Oliver, I may be driving across town soon to see you!
  17. Great Pix Great pix whiz! Do most people pierce their brisket? I really like brisket when it comes out right (tender, juicy and no sauce needed) but the risk reward ratio seems high. What about marinade? I know D'Jaurdins (sp) makes a brisket marinade.
  18. box was just fine I got 3 bags of wicked competition large bags direct from them in a box and it arrived just fine. Welcome to the forum and the world of ceramic cooking!
  19. Double Duty or is this triple? Today - NY Strips seared HOT and then coated Al Forno (garlic, Parmesan and olive oil) and finished indirect - wonderful! Served with a 2001 Rutherford CAB Sunday - 2 racks of baby backs and a whole roaster chicken in the roti - maybe pictures for these
  20. Does the bread taste like smoke, coal, fuel? Curly, I see you guys doing bread and wonder how much of the fire does it pick up?
  21. What about leaving it on the truck You can feed your friends from work at lunch.....maybe even make a few bucks. You would be all set for BBQ competitions once you get your skills down. I dunno....there are some interesting possibilities here
  22. Latch Adjustment BWF, Sounds like curly's advice got you straight and you were able to low and slow. I had a similar problem when I first go my cooker but I needed a latch adjustment. You should not have any smoke leak between the top and bottom. The latch adjustment is as easy as it looks...just loosen the bolts on either half, reposition and tighten. It should take just a bit of effort to put the latch in the second more closed position.

    Roti Question

I just got my cradle and my SS pieces only go in about a thread or 2 when hand tightening. Is this right? Should I get some leverage with a tool or does this indicate a mis-match?
