chuck roast

Well, after sitting in my garage until I could stand it no longer, I finally got my baby from my garage to the back porch. I am doing my first cook - a 10 pound chuck roast with a nice rub that firemonkey suggested. It already smells out of this world!

I am already awestruck at how stable the temp is! I have never been abel to use a grill with charcoal to sit there at 240 degrees with the needle just sitting there at one temp with virtually no adjustment - it's unreal. This grill is truly a low and slow machine! With my smoker, the temps were always all over the place, adding logs, wood chips, etc, the temp up to 350 then down to 180 then up to 250, etc. It was a pain in the rear to cook anything, you basically had to sit there with the smoker all day watching the temp guage.

The smoker old smoker is going out on the curb. :)
