	Anybody watch cowboy Kent on YouTube? I find him very entertaining and informative; he doesn't KK (don't think one would work well on the chuck wagon) but he does use a variety of cookers. Hasty Bake recently came out with a Kent Rollins signature steel "barrel" smoker and he uses it in some videos; those techniques should translate to the KK well.

	Per the title, everything is on sale, 18%  off everything that's not already on sale of clearance. I've ordered a billows to go with the Signals I ordered a few weeks ago when it was on sale for 25%  off. Also got the damper for the bellows as previously recommended here and the guru port adapter.

	I'm hoping the bellows can mount to my old style spare single dial damper control so I can use it with the cold smoker mounted in the guru port; I did get the guru port adapter since I plan on using it with the gravity feed smoker I have on order and that smoker has a guru port.
</p>

<p>
	I was going to also get the battery pack for the bellows but I couldn't find it on the site - hopefully, it's missing due to supply chain issues and will be available later;  I'd like to be able to use the bellows without having to run an extension cord.

	While i like the idea of a big butchers block style cutting board, I don't really have room for one built into a cart, a place to leave a board out, or the desire to move a heavy board in and out of a storage spot. I discovered Epicurean boards a few years back and they've worked well for me. They're made of a paper-based composite and are light, hold up well to use, are easy on knives, and (maybe) best of all, dishwasher safe. While not as decorative as a nice end-grain butchers block, they're pretty attractive and available in several colors. I highly recommend them even though they  seem a little expensive for such a light weight board.
</p>

<p>
	I've needed a new carving board with a groove to catch juices but was hoping to find one on sale but haven't had any luck. I was about to give up and pay full price for one, but while looking at the options available on the Epicurean site, i noticed a link to their outlet store. While still not inexpensive, the offerings there are at a pretty good discount. The site indicates that the items in the outlet have cosmetic blemishes that don't affect the item's performance.

	Anyway, i ordered a good sized grooved board last week and it was delivered yesterday. I'm happy to report that i can't find any blemishes on it at all! 	Ran across this Kickstarter. Living in the middle of the country, I can rarely get oysters in the shell for grilling ala Drago's. I can get good oysters and have done the "muffin tin" method, which works OK. So, when I saw this idea, I jumped on it. It has a long way to go to get fully funded, but you gotta start somewhere!

<p>Recently over at a friends house and I've become the defacto "BBQ" guy and so they asked me to do the grilling using their Akorn. It was an interesting experience, for 300 bucks or whatever they retail at in the US, it seems to be not a bad bit of kit. However, I've been spoilt by cooking on a KK for the last 10 months or so!</p>
<p>The main issue they were having was getting the thing up to a decent temp. It was a challenge... I used a Weber Chimney and then a hair dryer to get her going - far removed from my usual blowtorch a couple of spots in the coals and then just walk away for 10 mins with the damper wide open and the vent cover pulled out (then come running back as my wife tells me it's hit 600 again!) - but again, unfair to compare of course!</p>
<p>Still, not a bad little cooker - but the metal gets lethal after cooking for a while!!</p>

<p>I almost NEVER order steaks in a restaurant, because they NEVER taste as good as what comes out of my KK.  However, I am a sucker for a nice dry aged steak, and will absolutely go into a steakhouse for one when I am on the road.  Especially the steakhouses where you can look into the coolers and see the dark, crusty loins after drying for 3 weeks!</p>
<p>
I would love to age my own at home, but have always been concerned about keeping a low enough temperature, or having the smells from other foods in the fridge tainting the meat.  So i found this product intriguing:</p>

Komodo has built in shaft brackets that enable you to use these great  rotisserie cradles right out of the box and the top can be closed!!  I don't care what anybody says, a chicken turned in a  rotisserie is jucier and tastier than any other.. The turning lets the juces run thru the meat under the skin instead of dripping off.</p>

Motors are AC or battery.. These are really fast and easy to use..</p>
<p>
Call John and tell him what kind of Komodo you have and you'll never regret it or cook another bird with out it!</p>
