	After watching Guga's video (<a href="https://www.youtube.com/watch?v=FHS09PMA490" rel="external nofollow">2023 BBDO LETD LCS Let's Deliver Carbon Capture BL 15 OLV BUSLDR SOC TRUEV HUM NO 15s YouTube Truevi</a>), I thought that I'd give the compound butter idea a go, seeing as I had the HonDashi in the pantry already. Chuck steak rubbed with Rodney Scott's Porc<span></span><span></span><span></span><span></span>ini, Garlic &amp; Herb pepper rub, grilled on the lower grate. Top half-grate is spinach &amp; cheese stuffed portabello mushrooms with garlic panko crumbs. Plated with some nice cheesy polenta.

	<span></span>I did mix in some of the dry rub into the compound butter to tie it all together. I did notice the added flavor that the HonDashi added. Interesting. I'll probably try it again sometime.

	I have a good crop of chillis this year.  Not a huge number of chillis but given some of them are Carolina Reaper, Jamaican 7 Pot and Bhut Jolokia, I won't be needing very many to make a few blow your head off sauces.

	I have a number of go-to recipes but would like to try some new ones this year.  Grateful for your favourite recipes so that I can try them out.  Here is a mix of the ones I have used over the years:

	Once they are done fermenting in 4 - 6 weeks, then you puree and strain the mash and add whatever variety of vinegar you'd like to finish up the sauce. Then into the bottles.

Garlic, onions, carrots, lime juice, rice vinegar, and more chile heat than many people can handle. Think habanero, only more heat and a more complex flavor.<br />

	Finally got my hands on some reasonably priced tonka beans. 
</p>

<p>
	As a first timer, this tastes very much like cherries, vanilla, and trident cinnamon gum.
</p>

<p>
	I infused a tiny bit into simple syrup for a few minutes and made an iced coffee with it. To my surprise, it changed the coffee taste. It elevated the sweetness, without making it sweeter. It's almost like msg for sugary foods. The aroma is mild, but it sticks to everything it touches (knives, cutting board, hands). 
</p>

	I made some extract and syrup in the vacuum chamber and tossed some chopped beans in sugar. 
</p>

<p>
	I don't think the extract is anywhere near ready to use, but I think it gave it a few weeks head start.

	I've noticed here and on other sites dedicated to the art of cooking outdoors that a lot of folks tend to buy instead of making their sauces and rubs. While I don't really have an issue with this and I usually keep some Bone Suckin' Sauce on hand for "emergencies", it strikes me as a bit odd that folks basically out source a big component of their flavor efforts on a high percentage of all of their cooks seeing that so many of us go overboard on other ingredients, equipment, and techniques.

	It's it just for convenience? Not able to match a favorite commercial item? Can't find ingredients?

	<font color="#000000"><span>I made this up on a whim thinking of a fantastic chipotle wine sauce at a TX tex-mex chain called Cantina Laredo. This is just like their's but I think it is even better. Note - my salsa of choice is very hot - combined with the chipotles in adobo sauce this sauce had a healthy heat kick.</span></font>

		Add salsa and sour cream - continue simmering/stirring 2 minutes

		Strain through mesh strainer, mashing down to get as much liquid out as possible. Discard veggie mush.

		Return to stove and on lowest heat until ready to serve

	OK, had been reading about this latest trend in foodie world - crispy hot sauce from China. It's loaded with fried garlic and onions, to add texture to what otherwise would just be a Mala sauce (chiles &amp; Szechuan peppercorns in oil). I actually ended up trying this one, which is made in the US, as it was getting equally good reviews on Amazon to the "standard" Chinese version.

	The jar arrived yesterday, so of course I had to try it out on dinner! It went on sauteed green beans and mushrooms. Plated with a nice lemon pepper honey mustard pork chop. Pork chop on the main grate, direct, 350F. Lemon pepper rub to start and then sauced with the lemon pepper honey mustard sauce.

	OK, now I see what all the foodie buzz is about - this stuff is good! Glad that I only went 3 stars hot and not the 4 star version (which has ghost peppers in it!) Nice heat, love the crunchy texture it added. Will be experimenting more with it. I hear that it's great in scrambled eggs?

	    Here's a sauce from many, many years ago that I remember as a very tasty condiment too pork and chicken or use it as to how you see fit once you've tasted it. The recipe yields approx 1 1/2 gallons and could easily be adjusted, but why would you when you could gift a few bottles to friends. This is a vinegary, sweet and salty, peppery sauce that's definitely a winner. Add this to your pulled pork or marinate some chicken overnight, it's flavor is tasty, bold, and pleasing just out of the bottle. Back in the early 90's I made a large batch and bottled the contents up giving a number of bottles away to friends and wasn't surprised to find in a short amount of time those asking for more. Unfortunately, the recipe got misplaced, I looked high a low without success, I even sought out the book written by Jeff Smith aka The Frugal Gourmet for the it's whereabouts...unfortunately it wasn't to be, until a few days ago our paths happily crossed again. Jeff had a food prep show during the 80's on PBS featuring an abundance of cooks, dishes, recipes both ethnically and regionally for his show. I remember him as an easy watch and the rumor has it that the sauce was procured for an old woman in the Chicago area. Well, anyhow if your willing to give it a try, do it on outside burner..the vinegar will permeate the house.
</p>

<p>
	Using a large non reactive pot add all the following ingredients collectively in and bring to a boil. Once your at a rolling boil, slow the boil until it rolls a bit more gently for 1/2 hour as to simmer it. Stir on occasion, and as the original directions imply to keep the lid on..I didn't. I felt a little reduction wouldn't hurt and it certainly didn't tame the beast because all turned out well. 
</p>

<p>
	1.1 1/2 cup brown sugar
</p>

<p>
	2. 1 1/2 cup Worcestershire sauce
</p>

<p>
	3. 1 1/2 cup prepared yellow mustard  ( French's is good )
</p>

<p>
	4. 1 Qt. Ketchup
</p>

<p>
	5. 1/2 cup FRESH ground pepper  (no can stuff)
</p>

<p>
	6. 1/2 cup Red Pepper flakes
</p>

<p>
	7. 3 Qt's. Red Wine Vinegar
</p>

<p>
	8. 2 Qt. Water
</p>

<p>
	9. 1/2 cup salt   Morton's Kosher is good
</p>

<p>
	10. 1 Qt. White wine  I used Vinho Verde, a light dry Portuguese table
</p>

<p>
	1/2 cup of salt is original with the recipe if you need or want more I believe the amount of liquid will support it. Place the liquid in Glass bottles after it cools and refrigerate.  Use an empty beer growler to hold the majority if you have one on hand. Use a ladle and funnel to bottle contents with a mindset of continually stirring the peppery contents around for a consistent distribution/blend of the peppery mixture. Enjoy it in a Bloody Mary and don't forget to gift a few
</p>

	One last thing, the Progresso Red wine vinegar came came in 25 fl oz bottles so I used 3 and just filled 2 for the water portion. I believe that was why I cut back a little on the sugar and salt because these weren't full quarts. If you Google pride of deer camp BBQ sauce a bit more info will be available.

	Balsamic Vinegar from The Winery at Holy Cross Abbey in Colorado. We have been using this vinegar for years, it is better than anything we been able to source from grocery stores or the oil and vinegar shops. I use it for salads, dressings, brushing on veggies prior to grilling, the sweetness is great for a tomato salad with a mild cheese. Put it on your ice cream. If you like a nice balsamic you might want to give this a try.

<p>Ok, here are a few recipes.  Pretty simple, but pretty good.  I usually double them.  They are also sweet, so anyone prefering a more tart sauce, simpley cut them 50% with vinegar and they are still pretty good.</p>

Jasen's Muddied Mustard  (this is my Maurice's Piggy Park imitator)</p>
<p>
12 TB Brown Sugar</p>
<p>
1 TB Black Pepper</p>
<p>
2 TB Ground Mustard</p>
<p>
5 TB Ketchup</p>
<p>
20 TB Mustard</p>
<p>
15 TB Cider Vinegar</p>
<p>
2 TB Lemon Juice</p>
<p>
1 TB Liquid Smoke</p>
<p>
1 TB Tabasco Sauce</p>
<p>
1/4 Cup Water</p>
<p>
Combine all ingredients and simmer for 20 minutes.</p>

	1/2 Tbsp "Real Lemon" from the bottle (not fresh squeezed)

	1/2 Tbsp Worcestershire sauce
</p>

<p>
	1/2 tsp sea salt 
</p>

<p>

	Return to a full rolling boil.

	For refrigerator use reduce heat and simmer to desired consistency.

	For canning go straight to a 10 minute water bath. Approximately 6 regular jelly jars and maybe one small jelly jar.

	No, wasn't on Dune chasing worms but drove to Bass Pro Shops for a quarterly restock on some rubs. Location in Foxborough, Ma with a great supply of outdoor, camping, fishing etc supplies to keep you tidy. Went right to the spice dept and found that there regular selection diminished from the last visit but I found these to keep things going. Added were a couple of snaps inside showing only a fraction of it's offering and right next door was the stadium where banner #6 will rise in September. Great BBQ history in these parking lots.

	Just came in the mail. I saw a program last week on TV and the Guide on this show took us around the back alleys of Istanbul where their most ethnic markets and restaurants are. I enjoyed the show and thought maybe I could capture a little of that at home. Does anyone have a familiarity or experience using this spice or am I looking into an empty pot so to speak. I recently bought a container of John Henry's Summer Peach Rub and as instructed used it on a brisket. The brisket was cooked correctly, but the rub killed the Brisket to the point it went into the trash. That was a first. I've used  Morrocan spice on chicken and felt that was very good if used with a little sea salt. Anyhow Thanks for whatever you have to offer

	1 cup of red wine<br>
	1 cup brown sugar<br>
	¼ cup apple cider vinegar<br>
	¼ teaspoon allspice<br>
	1 can tomato sauce<br>
	3 tablespoons tomato paste
</p>

<p>
	Salt and Pepper to taste
</p>

<p>
	Place wine, brown sugar, vinegar, tomato sauce, tomato paste, and allspice in a saucepan.<br>
	Simmer the sauce for at least 45 minutes and season to taste. The sauce should be rich and thick.
</p>

<p>
	Good for ribs!
