I'm embarrassed to admit it but I'm pretty lazy when it comes to wings, I use a store bought mix but it's pretty damn good and guests always ask for them so it could be too bad.

The guys on TVWB rave about these and they look awesome but I've been too lazy to try them ORANGE MARMALADE SRIRACH WINGS

I have a friend who makes Buffalo wings indoors (deep fried) that are twice as good as any restaurant version I've ever tried. (As in, someone else ordered them. I wouldn't.) The two critical pieces of advice:

  • Cook thoroughly[/*:m:osnzdnqv]
  • Use a potent hot sauce to prevent soggy wings[/*:m:osnzdnqv]

How one best translates this to the KK is a good question, but these two principles explain every dreadful wing I've ever had in a restaurant.

This one is not bad and easy to modify for those that like changes. (girlsatthegrill.com)

Chicken Wings Hands Down Best:

2 6oz bottles Crystal brand hot sauce

4 pounds wings and/or drummettes

Ine-grain sea salt

Olive oil optional

Grilling Method:

Indirect/Med heat (New.... "Dennis KK grill foil method for indirect" should work great here)

Marinade:

Empty one bottle of hot sauce into one of two ziploc bags. Repeat w/other bag.

Divide chicken equally between bags. Seal.

Turn bags occasionally to make sure all meat gets wet and covered w/hot sauce.

Marinate 2 hrs/overnight covered in fridge:

Cook:

Remove from bag and place in center of cooking grate over indirect heat. Discard marinade.

Close lid and grill 20-25 min/until beginning to brown:

Turn over,and cook another 20 m:

/until wings are crispy and completely cooked through.

Remove from grill, place on clean platter and sprinkle w/sea salt.

Note:

If without a grill and want to make these, preheat oven to 400 and place wings on sheet pan fitted w/rack. Roast wings in oven 20-25 min, take out and turn them over w/tongs.

Place pan back in oven and continue cooking until golden brown and cooked through.

Sprinkle w/salt and brush lightly w/olive oil.

Another easy one:

1 C mayo

4 oz Sambal chili paste

6 cloves garlic crushed

1 T light soy sauce

2 lbs chicken wings

Sea salt

Mix ingredients well. Add wings and coat well. marinate 12-24 hours.

Indirect heat at 275 for about 1 hour, increase heat to 350 and cook till well browned. Sea salt to taste after grilled.

I tried the "ORANGE MARMALADE SRIRACH WINGS" (on SB XLV day ) and they were **delicious**. Thanks for sharing here. The kids (12 and 14) didn't mind the spice... given the 1/3rd cup of chili sauce, I was expecting otherwise.

PS: I'm sure happy I had a grill floss though... can you say 'candied SS grill'. Would have clogged the SS brush on the first scrape.
