I couldn't wait for the cure to finish, so despite the faint smell , I decided to go ahead and cook three pizzas for my family. Can't wait to smoke this pork in my fridge. I'm trying to figure out the timing--if I start now, I should be done by lunchtime tomorrow... One issue -- I wasn't sure whether or not to use the heat reflector. It cooked a bit unevenly, probably due to the coals being lit better on one side. But it tasted amazing.
