“Black Dogs†Florida Casserole

2 T oil

1 lg can baked beans

1 pkg hot dogs 8-10

1 T mustard

2 T ketchup

2 T brown sugar

2 T barbeque sauce

1/2 sml onion chopped

Burn hot dogs on KK. (crisp black outsides) Heat Dutch oven on KK. Add oil, cubed hotdogs, beans, onions, mustard, brown sugar, ketchup, and barbeque sauce. Cook 25-30 min/until heated. Tastes great w/potato chips!

“Angry Potatoâ€

2 # fingerling potatoes

4 t olive oil

1 pt grape tomatoes

1 T smoked paprika (medium)

1 t sherry vinegar

1/4 t cayenne pepper to taste

* salt to taste

Preheat KK to 375. Cut potatoes into 1" pieces. Toss w/1T olive oil and place on a cookie sheet in one layer.

If cookie sheet is large enough place tomatoes on same sheet, otherwise put them on their own cookie sheet or in a small oven-safe dish. Cook tomatoes and potatoes 30 min/until potatoes are tender and golden and tomatoes are melting. Remove from oven. Transfer tomatoes to a bowl and add remaining 3T olive oil, w/vinegar, paprika, cayenne and salt. Mix well w/fork, breaking all roasted tomatoes into sauce. Place potatoes in a bowl and toss w/sauce. Add more cayenne or salt to taste.

Makes 6 side servings.

“Carrotsâ€

1 2# pkg carrot

1 t salt

1 t sugar

1/2 c butter

1/2 c brown sugar packed

Peel and slice carrots. Place in pan on back of KK and cover w/water. Add salt and sugar. Bring to boil, reduce heat to med and boil gently 20 min/until carrots are very soft. Drain. In same pan, heat butter and brown sugar until melted and bubbly. Immediately pour carrots back into pan. Stir to coat.

To freeze: Allow to cool. Place in ziploc bag. Label and freeze.

Cooking Day: Thaw - Heat and serve.

“Hushpuppies Sobotta Familyâ€

1 c self rising cornmeal

1/2 c self rising flour

1 t sugar

1 sml onion finely chopped

1 c milk

Mix all ingredients together. Heat in small heavy sauce pan 3" of Wesson oil until it is hot. Fill a coffee mug w/cold water. Take a soup spoon, wet it in your coffee mug of cold water, dip it in your mix so you have about enough mix to cover about 1/3 of spoon lengthwise. Carefully let it slide into hot oil. If your oil is correct temp, there will be lots of bubbles around hush puppy. If you take a long handled metal slotted spoon and touch the just dropped hush puppy it will sink to bottom of the pan, it should rise to surface easily. If oil isn't hot enough, just keep trying. When oil is proper temp, dropped mix will bob to top of oil w/little encouragement. Turn hush puppies until they are golden brown and place them on a platter w/paper towels.

It takes a little practice, but it isn't that difficult. They are best done in small batches. You're working w/very hot oil so be very careful and keep kids away from the cooking. Don't be surprised if for the first few min’s, hush puppies keep disappearing. The recipe makes enough for a huge crowd, probably four dozen or more.

It does make something of a mess, but the good hush puppies are worth it.

“Onions KKâ€

6 med onions peel

6 T butter softened

6 t beef bouillon granules

1/8 t garlic pdr

1/8 t coarsely ground pepper

6 t sherry optional

* Parmesan cheese shred

Carefully remove a 1x1" core from the center of each onion. Place each onion on double thickness of heavy-duty foil (12"sq). Combine butter, bouillon, garlic pdr and pepper; spoon into onions. Sprinkle w/sherry if desired. Fold foil around onions and seal tightly.

Grill: Covered, over med heat 350 for 30-40 min/until tender. Carefully unwrap foil to allow steam to escape. Sprinkle w/Parmesan cheese. Yield: 6 servings.

“1-2-3 Peanut Butter Pieâ€

1 9" pie crust

1 box vanilla pudding

1.5 c milk

1/3 c peanut butter

Prepare pudding mix according to pkg directions. Add milk and peanut butter mixing well. Pour into pie crust. Refrigerate until ready to serve. Garnish w/whipped topping and crushed peanuts.
