Cooking despite curing

fetch?id=68287 I couldn't wait for the cure to finish, so despite the faint smell , I decided to go ahead and cook three pizzas for my family. Can't wait to smoke this pork in my fridge. I'm trying to figure out the timing--if I start now, I should be done by lunchtime tomorrow... Also, I have to recommend this puppy for lighting it: http://www.amazon.com/Bernzomatic-19425 ... 380&sr=8-1 My nephews were in awe. One issue -- I wasn't sure whether or not to use the heat reflector. It cooked a bit unevenly, probably due to the coals being lit better on one side. But it tasted amazing. Frank Pepe I'm coming for you.

I recommend using the heat deflector, and heat sinking the baking stone well in advance. 650 - 750 is your baking range, but only after your break in period.
