Looking forward to experiencing some real highend BBQ. I have used a Weber for years with lump as my neighbours looked over the fence shaking their heads. no more! It is faster to learn to nudge the heat up than to bring the heat down. READ, READ, READ. (Master low and slow heat control) Fastest way to decrease heat is to close unit down and wait. Patience is not just a virtue, it is a necessity for properly heat soaking and using these cookers. The rewards justify the time taken. BTW, there is no one way to learn this. Welcome to the family.
