    Needs some help

    I cooked a leg f lamb last night it was 5.5 pounds

    Low and slow 225f and it took 10hrs to get to 195 f

    I let it rest for 1hr and it was dry

    Is this because of the type of meat ?

    Does it need to be cooked faster and hotter ?

    My wife thinks it looks like r2 d2 so that's going to be its name

    doing a burn in now

    I'm lucky enough to have Dave from Hectors Smoke House

    coming down on sunday to give me his expert advice

    Im new to the forum

    I have ordered a 23" olive gold pebble kk it arrives october 31

    when it arrives i will post pics, can't wait

    We have a few kks in Australia and I've had the pleasure of seeing one in person

    Dave is a BBQ master and is going to help me with my first cook Ribs then Steak and Pizza

    my specialty is restoring old coke fridges
