  1. I am only smoking a 1 pound filet. I know that's a lot of work for a small yield but it's just the two of us and I don't want to be eating smoked salmon for weeks. My question is 2 part. What temperature should I smoke it at? I'm googling and getting anywhere from 160 to 200 degrees. Second question, how long will it take to smoke a 1 pound filet? Thank you : )

  3. We just bought the 23 Ultimate. My first cook was a smoked brisket for a tailgate (26 people). We nailed it. Go big or go home.
