cpwebb Posted November 17, 2011 Report Share Posted November 17, 2011 I had this small 2 lb. arm roast of Piedmontese beef and decided I would cook it like a steak. I brought the KK up to 400, I am having problems stabilizing anything higher, and cooked the roast for about 5 minutes on each side - using the inverted upper rack on top of the charcoal basket.
