Got a rib and burnt ends cook in progress (It's smoke day over on TVWBB today so I'm participating) and I'm filming to go along with the Standing Rib Roast video I shot last weekend. Here's the video, I'm mid cook so I'm only posting in 480, final cook will be in 720 -

I'm doing 4 racks tomorrow, baby backs St Louis style. The Big Bob Gibson BBQ book says to cook 4.5 hours at 250. Will I get a more fall-off-the-bone finish if I go 6 hours?

Six hours is too much for baby backs unless you want them to fall off.

Larry, your audio drops off quite a bit, but I enjoyed much viewing the video! Fresburg is quite cool today!
