Did it Jim's way and it was FANTASTIC. Maybe the best overall cut of beef we have had. Invited 6 couples over and had a great time. Now they are all very interested in the "mermaid" (green tiled kk).

Hello and Happy Holidays. Hope all is well with everyone. I am planning to cook a whole beef tenderloin on New Years Eve. I figure on rubbing with EVO and salt, pepper or maybe char crust and doing indirect @ 500 until medium rare. Any suggestions? An oven recipe that is great is to cook @ 500 for 11 minutes, turn oven off and leave inside for 1 hour WITHOUT opening the oven door. It's real good.

I smelled like smoke, butt they loved me just the same! Cooked two butts indirect starting Friday night. Rubbed them down good the day before. Total cook time was right at 19 hours (internal meat temp. ~190) Turned out really great Gave a bunch to neighbors and bro-in-law. Burned at 235 for a long time, one observation was that KK temp drifted too low (~180 early Sat. am). She wasn't out, but I think the remaining coal was really hot because it may have been too spread out. I wound up putting 2 hand fulls in the center of the basket to get her up to 225. Next time, I'll arrange the coals more carefully.

Which do you guys like best, the Guru or the Stoker? I get the feeling one or the other is necessary for cooking a 10+ lb. hunk o' meat.

That's funnyashell. Try Cartledge & Brown or Wente (good low cost chardonnays). I like reds better myself too.

It's just me, the little lady, and the short people anxiously awaiting the delivery of an OTB 22. I understand that the driver will get the beast off the truck, but is there an easy way to roll her off the pallet or do I need to get some brutes from work to help out? Thanks.

Sirloin Tip Roast
Option A sounds good to me. Will use ROT of 1-1.5 hrs/# for doneness. I like mine medium rare.

Any advice on indirect cooking of a sirloin tip roast. My brother-in-law does on indirect over a Ducan gas grill thats real good.
