I did 4 butts, 2 spatchcocked chickens and 3 racks of babybacks all on Saturday/Saturday Night.

I overcooked the ribs by staying at the neighborhood pool about 2 hours too long but everything else was wonderful and yes I have a freezer full of leftovers and gifts for the neighbors.

Do most people pierce their brisket? I really like brisket when it comes out right (tender, juicy and no sauce needed) but the risk reward ratio seems high. What about marinade? I know D'Jaurdins (sp) makes a brisket marinade.

Latch Adjustment

Sounds like curly's advice got you straight and you were able to low and slow. I had a similar problem when I first go my cooker but I needed a latch adjustment. You should not have any smoke leak between the top and bottom. The latch adjustment is as easy as it looks...just loosen the bolts on either half, reposition and tighten. It should take just a bit of effort to put the latch in the second more closed position.

I just got my cradle and my SS pieces only go in about a thread or 2 when hand tightening. Is this right? Should I get some leverage with a tool or does this indicate a mis-match?
