I’ve used mine for a few 15-20 degree cooks. I just slooooooowly bring up the temp and then recover it once it cools to about 250. Love this thing

I used the drip pan as a deflector. Cooked at 225. Dead even temperature and didn’t touch it. I will say the KK holds temp soooo much better then my BGEs. Ribs were ok - too lean of a rib for my taste but family liked them Sent from my iPhone using Tapatalk Pro
