Bobkat Posted October 5, 2007 Report Posted October 5, 2007 Couldn't find the 'Boston Butt' at Sams today, but got a picnic shoulder it looks like. Anyway, do I leave what appears to be the actual hide that covers what I guess would be the outside of the pig's shoulder on for the cook?

I would absolutely leave on the skin. The shoulder is a great cut, usually cheaper than the butt. It has more bone in it and may take slightly longer to cook. I think I prefer the taste of the shoulder as all that extra bone brings more flavor. I think you will be happy with your choice. If you use a thermometer, make sure you do not place it next to the bone. Now, get cooking and get us some pics.
