What I do is criss cross cut the skin so the rub gets down into the meat. I would absolutely leave on the skin. The shoulder is a great cut, usually cheaper than the butt. It has more bone in it and may take slightly longer to cook. I think I prefer the taste of the shoulder as all that extra bone brings more flavor. I think you will be happy with your choice. If you use a thermometer, make sure you do not place it next to the bone. Now, get cooking and get us some pics.
