Rib steak

Did a quick and dirty rib steak yesterday. Heated the KK with Royal lump charcoal, brought her up to 550F and 2.5 minutes twice on each side, top grill.... Put the Thermapen in and it read 125F soooooooooo, off it came, delicious!
