hipquest
This can make a little or A LOT just adjust measurements. It is very refreshing. 1 1/2 lb peeled, seeded and diced cucumbers (1 1/2 lb after prep) 1 lb fresh or frozen sweet peas, blanched Dressing 1/2 cup sour cream or yogurt 1/2 cup mayonnaise (I do not recommend Miracle Whip) 1-2 TBSP vinegar, cider, balsamic, etc. 1/2 cup fresh dill weed (or 1/4 cup dried) I use a lot so adjust to taste 1/2 tsp onion powder 1/2 tsp garlic powder Sea or kosher salt to taste Mix dressing ingredients, cover and chill for 1 to 48 hours, taste before tossing to see if you'd like to adjust any seasonings Prepare cucumbers. Toss with 1 TBSP kosher salt and put in a colander, let sit for 15 to 30 minutes. Quickly rinse and pat dry Toss dressing and veggies. Loquitur
Thanks, Hipquest, for posting this recipe. I grow cukes in a tiny garden and am always looking for new recipes for them. This was delicious - not to mention easy and versatile. Hope I'm not breaking any rules with this post. Susan
