Recommended Posts

A friend of our had to remove a Walnut tree from their yard so I scooped up a bunch for smoking.........

Now the question is, has anyone ever used Walnut to smoke with?

Never tried but found this:

Black Walnut: While pecan is hickory's milder cousin, black walnut is the strong one. An intense smoke that is slightly bitter like walnuts. Good on red meats like Beef, Pork, Venison and other game meats. Can easily overpower poultry.

Just my 2 cents but if it can overpower poultry it can probably overpower pork!

Black walnut can be very strong if used in large quantities; I suggest that small (2->3 inch) be used one at a time. Walnuts removed from the outer shell also work, but again use one nut at a time to establish what you need to smoke with as too much is way too much. :!:

Often wondered about using walnut wood to smoke with. I have used the oils from the dried hulls to stain a gun stock in my youth. I learned to use rubber gloves, that stain doesn't come out easily, and I had to work in a grocery store meat dept. at the time(as clean up fortunately!)
