T Rex Posted July 12, 2010 Report Posted July 12, 2010 Well, I hadn't had beef ribs for a little while so I went ahead and did a small rack........ I reduced the BBQ sauce a little more than I wanted and cooked the ribs a bit more than I wanted but man was it good. Mrs. T Rex made some Yorkshire from the drippings, albeit in the oven this time. Here are a couple of pics... Sauce The ribs before basting (rub only) Ribs ready for the table Yorkshire puddings The plate Yorkshire may seem a little bizarre with ribs however I didn't want to wast the drippings and we had some gravy to thaw from a recent roast........ Fresh baby smashed potatoes and fresh Peaches and Cream corn shaved off the cob, infused with a ton of butter and fresh cracked corn. Overall a good healthy dinner.......... T Rex
