Nice bird.........

Nice bird, it is also one of my favorite ways to do chicken on the KOoker.. The part that kills me is the skin comes out so nice done this way however, neither Mrs. T Rex or I eat chicken or turkey skin....... :(

I've always cooked my spatchcocked chickens skin up, but clearly there's an advantage to the opposite!

Was it skin down all the time, or did you flip halfway?

Skin side down

I start with skin side up for about 20 min and then skin side down for another 20 or so depending on size of birds. Usually mine are 3.5-4.25 Too much fat to start skin side down.
