fcnich Posted August 21, 2011 Report Share Posted August 21, 2011 Although these meatballs are simple, here are a couple of critical points. First, i suggest a blend of ground veal, pork and beef. Avoid using turkey or chicken for the veal, both tend to make the meatballs chewy. Also, dont use lean varieties of ground beef, they lack flavor and moisture. Second excercise restraint as you make the meatball mixture. Overdoing the mixing can make the meatballs tough. In fact, i use my hands to knead everything together, its more gentle. Grate onion on a box grater, just like you do cheese. And before you shape the meatballs, saute' a patty of the mixture in a skillet, then taste to make sure the seasoning is okay. Norwegian Meatballs w/brown gravy Makes 30 meatballs, 3 cups gravy For the meatballs--- 3/4 cups grated onion 1/4 cup half and half 2 T corn starch 1 egg 1-1/2 tsp Kosher salt 1/4 tsp ground nutmeg 1/4 tsp ground allspice 1/4 tsp black pepper Add and shape; heat: 2 lbs meatloaf mix (equal parts of ground beef, veal and pork) 2 T unsalted butter 1 T olive oil Prepare: Brown gravy to follow Preheat oven (or your kk if you got one!!) to 400 degrees, Line a baking sheet with parchment paper Whisk onion, half and half, cornstarch, egg, salt, and spices together in a large bowl. Add ground meats, blend to incorporate, then scoop into thirty 1 1/2 " meatballs and place on the prepared baking sheet. Heat butter and oil in a non-stick skillet over medium heat. Roll meatballs between your palms, then brown in the butter mixture (in batches), about 2 min. per side, do not cook through. Carefully transfer meatballs to Dutch Oven, pour off fat from skillet, and return it to the burner over medium heat. Prepare brown gravy. For the Gravy--- Deglaze with; stir in: 4 cups beef broth (divided) 1 T beef base 3 T all purpose flour 1 tsp Kitchen Bouquet Salt and pepper to taste. Deglaze the skillet the meatballs were saute'ed in with 3 1/2 cups beef broth, scraping the brown bits off the bottom of the skillet. Stir in beef base and bring to a boil over medium heat. Meanwhile, wisk flour and Kitchen Bouquet in a cup with remaining 1/2 cup beef broth. Add this mixture to the simmering broth stirring constantly. Cook 5 minutes skimming if necessary, then season with salt and pepper. Pour gravy over meatballs, cover dutch oven, and braise 35 to 40 minutes or until meatballs are cooked through.
