Then after that is done do the "Venting" thing at 450. My questions are, direct or indirect, which grill, Main or the Higher one? What temp ? I usually do them at 350 ? Thanks. I cook mine up high on the main grill, it takes a little longer than down on the next lower level, where you can also cook it. I like it up higher because it gets a little more smoke. mnacht Posted April 3, 2012 Report Share Posted April 3, 2012 Re: Wings Just made the wings for the first time this past weekend. Used a standard dry rub and let them sit in the fridge overnight. Then I smoked them "indirect" with CoCo and applewood for about 35 - 40 minutes at 300 degrees. Then removed my indirect stone and finished them off to get a a little crisp on the skin.
