bobvoeh Posted May 27, 2013 Report Posted May 27, 2013 Whats everybody cooking for their Memorial Day? I have 3 racks of baby backs cooking. I started them at about 12pm so they should be ready for an early dinner. I slathered on some yellow mustard and then a healthy coating of Dizzy Pig's Dizzy Dust. I have the coals and wood chips all nice and neat. Combination of Hickory, Mesquite and Apple with Royal Oak. A couple of minutes after hitting it with the MAP torch and its lit. The ribs are lined up and ready. The next pics won't come until their ready, it doesn't get opened until then

I started the Ribs on the Rib Rack but. All the brown sugar went into the drip pan. They are now laying flat. I figure 4 hours. Need to be a little "undercooked" as we are going to B-I-L's house. Will finish at his house. Enjoy your day. Thanks to those who sacrificed for us.
