Thanks for the red wine staves, Leaddog. Sorry for the delayed response. We uncrated the KK this weekend, and have had two initial grills. After I figure out how to control for temps, smoking, etc., I'm thinking I might do multiple tests with staves. I'll try dry, presoaked, early and late addition to cooker. Not sure what flavor to expect from oak, but I'll give you my take on it.
