  1. Very nice work! Super shots, and looks like a great rub recipe! I'm gonna try to let the rub work it's way in like you did, I usually just coat them and then light the coals, then when the temps are right,put on the butts. And yours have been cooked in a KK that's been blessed by a champion!

  2. Oooohkaay, Now that you've included my name to the mix... Cremate me in the Sioux fashion(I'm not Native American), and serve the biggest pot of Jambalaya you've ever seen in my KK. And in the other one,...I'll have to think on that one for awhile. I've cut up many creatures, but have to draw the line at human surgery,especially post mortem. Even if my inlaws have a "favor" for me to do ala Satrialle's in the Soprano's. Why do you need a butcher when a backhoe will do!?

  3. Hmmm, good point. The problem here is that this guy is cutting up a carcass that is not refrigerated, or at least it's not real cold. We had to do this in a cold room, below 40 degrees, and the carcass had to be kept at temp from the holding cooler at under 38 degrees. No question this guy is good, nice sharp knife. I was really impressed with the Argentine butchers when I was there last winter. Great video.

  4. You're gonna love the way the KK grills steaks. On occasion we have been known to grill some of the steaks that aren't quite up to par with the rest of the NY strips we sell( Denise keeps bringing home the "vein" steaks). these steaks have quite a fair amount of gristle running through them, but cooked on the KK it practically melts into the meat. Result...unreal,light smokey tenderness.

  5. I use the grill floss, and a scotch brite pad, usually with just soap and water. Dennis uses some very high quality stainless grates, and I'm not afraid to occasionally use EasyOff oven cleaner, only at the store though. We then use soap and water and a bleach sanitizer(code!)in a triple compartment sink. At home the grill floss and a grill brush works well. I use the Magic Eraserfor the tile and stainless band around the top. The first time I used it I was scrubbing with it and using it dry(thinking it was like a real eraser!)and it worked pretty well. After the first one wore out I read the directions. It works a whole lot better if you follow the instructions!

  6. The party was worth the labor. Unfortunately the Mom's estate hadn't even been settled yet prior to the plane crash that killed the Dad. The property is on the lake shore near the Baha'i Temple, the price tag for this real estate is a little out of the price range for me...rough guess 10 to 15 M. Guess we'll have to go back to our old tradition of havin' a pig roast in our own back yard! Tonight beef back ribs on the KK if I can ever find the post on how to do 'em proper! As well as rib tips from some St. Louis ribs I cut for the customer who followed me into the store this morning.( We're closed!) Hard to turn down cash in this economy!

  7. Pig roast for the fourth for a family that had tragically lost their Mother two years ago to cancer and their Father less than 6 months later in a mid air collision in Wyoming. This could be the last time we BBQ on the shores of Lake Michigan. What a great spot to see the fireworks from Wilmette, about 300 yards away! R.I.P. Ralph and Dianne Otto.

  8. When it comes to open air BBQ,compared to the Argentines, I think we are all amateurs. I visited my daughter in Buenos Aries and we traveled all over the country. These folks can BBQ, all day every day. Mostly beef, but the lamb,chicken and goat were superbly prepared! Not much pork though.

  9. Wish I had taken a pic! I totalled my 2000 wrangler right before Thanksgiving or right after(took out a Toyota Highlander...I actually drove home). This was in a 2004 Unlimited, fit pretty well, also has a towing package with beefed up suspension. I was impressed, quite a crowd in front of channel 7 studios getting it unloaded, almost got a ticket from Chicago's finest(probably mad we couldn't give him any Q!)I thought we took some pics, have to look back into the camera memory!

  10. Jeff, I can't stress(pun intended)enough to get help when loading your KK. I've done it about 10 times over the past two years, the last time I tried to load it solo with an engine hoist to the back of my Jeep Wrangler. Thank goodness my Wife came to my rescue and helped me guide it into the back of the Jeep. Even when rolling it up and down a ramp in front of my shop I get the help of my butcher. One small slip would send it off the ramp and crash to the pavement. And I'm only talking a height of about a foot.And ,with appolgies to Dennis, but I'm not about to come between 550 lbs of a ceramic tiled refractory device and the hard cold(now 96 degrees) pavement. You can't Q with a broken leg,arm,hip foot,etc.Get some help and make a friend forever! Just repay them with the best food this side of Big Bob Gibson's!

  11. Y'know, I felt pretty bad about that reply to Fetz, He's a great guy. And far be it for me to criticize anybodies meal. I don't blame him if he "flew me the bird" for that! This looks fantastic by the way! even though I'm a red meat monger, I always try to order seafood when I'm dining out(which is seldom). Great work FM(you too Fetz)!

  12. Amen to that Orthoman, I followed my wife to Chicago from Just over the river.I now call it home(north suburbs),although lately it seems to be like Seattle.No offense meant to the fine folks in Washington, but it's tough to mow the lawn in-between the rainfall.
