  1. After roasting..... you skin them ,chop up and put in freezer bags for later use. Used to make Green Chile Stew ( Northern New Mexican Cooking) .... Green Chile burgers( Chile on top ).... Can also put on Steaks. Pink Adobe Restaurant in Santa Fe ( Dunnigan Steak ) other sauces and what not. Google Hatch Green Chile .......... many recipes...... You can also buy in cans all year round.. Just love the smell of Roasting Chile.. Means Fall is close at Hand Steve...
  2. Great Basket, Went Friday and picked-up a 1/2 sack of Big Jim ( mild) and 1/2 sack of Sandia (Hot) .. Grower from Hatch comes every year....... Notice the heavy duty Roaster!!! Steve
  3. Yes, I know I am a lucky one. But notice the tiles missing on the feet...... Lance a friend helped me position it by using plywood and rolling it to it's location... Guess to much stress on the feet .. slowly tiles have started to fall off. I still have the tiles but no patience to fix...... Amazingly only falling off down below. I became aware of the Komodokamado a few years ago........ big difference... POSK= ????? Steve
  4. Howdy, I have an older Kamado ... The company has since gone out of business. It is still in fair shape but when it fails I would love to replace it with a Komodo Kamado. Stay tuned. Steve
