Rubbed them, threw them on at 250, closed her, came back 5 hours later and this is what they looked like. Meat came off bone with a gentle tug. Perfect flavor, smoke, tenderness and sooooo easy.

  6. Re: Bacon Cook - VIDEO Those look great Dave! I pulled a .8 lb vac sealed pack out for breakfast Saturday and even after deep freezing it tasted awesome. Freezes very well. Going to go down to the Asian market and pick-up more. Bye bye store bought bacon.
  7. Re: Bacon Cook - VIDEO @heavenlyink - I used Morton's Quick Tender and then added brown sugar to one and maple syrup to the other. That's it, pretty easy. I also have the book "Charcuterie" which contains a couple of cure recipes also. Morton's QT is pretty damn easy so I went that route. Hope that helps.
  8. Re: Smoking wood I've used them in the past and liked their woods. I like the fact that they stamp the type of wood on each piece. I had a do gooder clean my garage once and combine three (unique) boxes into a single box to save space. What they didn't realize was they created a "surprise smoke" box; I never know if I was using cherry, red oak etc.

May have mentioned I was out with the new wife on Friday night, had one made with Knob Rye, it was pretty good, but Templeton (on my palate) was much better. Looking forward to a couple Manhattan's this weekend.
  16. Re: Rye Whiskey Recommendations Interesting timing on your thread doc. Here in North Las Vegas there's a small airport and one of the flight schools is offering intro flights for $100. I'll be doing mine in a couple of weeks. When I lived in Central California the community just east of me was a Skypark. My son and I would head over there on fly in days and checkout all the aircraft. Was a pretty cool little community, most of the homes had hangers, own private air strip and some of the nicest people you'll ever meet. A fairly popular musician from the 80's lived there with his wife, chatted with him about his love for flying a couple of times but never got the bug back then. Anyway, I'll let you know how it goes.

  24. Decided I want to try Rye Whiskey in my Manhattans vs. Makers Mark, I guess this is the "true" recipe. Anyone recommend a good Rye Whiskey?
