  1. Re: Kamado covers One note on the covers. If you live in a windy climate like I do, the bottom edge of the cover will get some wear from hitting the cement the KK sits on here in TX. Simple solution is to use a bungee cord under the KK connected to the two grommets provided. The cover is a great product and this should help it last.
  2. Did a 15lb pork but at 200 for 20 hrs. Served it up at my Super Bowl Party and the gang enjoyed it. Used Dizzy Pig Dizzy Dust dry rub for the first time...... purchased at my local hardware store of all places. Will definitely do it again!

    Fast Food

Had a flock of kids over for my daughters party and wanted to use the KK. I bought 6 take and bake pizzas at Costco on sale for $7.99 @ and put them on the KK for about 15 mins at 450. The results were fast AND good judging by how fast the pizza disappeared. I did it on two different occasions. One with lump and one with extruded coconut. I preferred the lump and the flavor it provided over the coconut. I like the smoke so others may feel differently.
  4. Re: Short cooking time, runaway temps. Wha' happened? Interesting approach. I had the most successful long, low and slow cook ever. Will try this next time.
  5. Re: Short cooking time, runaway temps. Wha' happened? Just did a pork butt at 200 for 20 hrs. I was amazed at how steady the temp stayed. I lit a small amount of lump at the bottom. Got it nice and red then filled the entire basket with more and closed the lid with the top open 1/4 and the bottom about 3/16". No pork butt yet. Went inside and applied the rub then got on a conf call. Came out to find 300 and closed the top and bottom and she stayed at 300 for over 30 mins. I opened the lid, put my welding gloves on and pushed the coal down to knock off some of the embers. I pushed/stirred it up pretty good. Left it at about 1/8 on top and 1/16th on the bottom. She lowered to 225 and I closed the top a fuzz more and she dropped to about 200. Put the pork butt on and she stayed a steady 200 for the next 20 hrs!!!! I didn't bother getting up at night to even look. It was not only a great cook but tasty. I have never been able to hold a steady temp like this before on the RJ. Life is good, cheers.
  6. Re: cover for new 23" KK I'm a proud owner of a johnnyboy cover and he does a fine job. I ordered and received before the KK even arrived. Took about 3-4 weeks if I remember correctly. That's custom using the Sunbrella fabric color you pic from their selections.
  7. Re: Meltique Beef the world's finest larded meat? Interesting comments on beef. Here in the Us I'm seeing more and more references to grass fed beef and hear that it has excellent flavor. I haven't seen it in the stores but have not really looked for it. I do see it on restaurant menus and will have to try it some time. Here in TX with all the drought there is little grass to be found so the beef will be feeding on hay and grains brought in. Mark you are lucky to have access to such great beef. In TX a lot of the free range meat (deer, boar, duck, geese, turkey etc.) is killed before its grilled by hunters. My neighbor is a big hunter and I'm hoping some fresh kill makes its way to the KK. The Meltique beef is worth a try......if I can get over the lard. I know it melts and cooks off but something about it rates right up there with blubber in my book. Just picked up a nice brisket and look forward to grilling it this week. Already promised my daughter that we would go out for sushi tomorrow for her birthday so KK is not going to be in action .
  8. Re: 2nd KK in Frisco You're right but it is well deserved!
  9. Frisco is now sporting its second KK. Is there another one coming? It arrived in all its glory last week. Yes the truck had a lift gate and a pallet jack. Only difficulty was getting it through the gate due to the slope of the ground. A few shims under the pallet jack is all it took to get it to stand up straight and fit through the gate into its new home. Un crating was a breeze. Just remove the 8 bolts, 2 @ corner, and lift it off the top of the KK. A crow bar and a knife is all it took to free it up for lifting it off the base. The detail Dennis and team goes to is impressive. The ropes for lifting were a tremendous demonstration of foresight and customer focus. To make a long story short, I had a fire in it within 24 hrs of delivery. The crate made a nice little (not so little) fire that helped beat the evening chill. The new addition is sitting comfortably under a Johnny Boy cover in the rain and can't wait to do some more cooking soon!

    Covering your KK

Re: Covering your KK Smog-B-Gone sounds like smokeless tobacco for your car. "Just a pinch between the hood and carburetor is all it takes." Will the day come when our KK's have to pass a smog test too?

    Covering your KK

Re: Covering your KK He may end up needing a shovel and a wheel barrow to get all the pieces!
  12. Re: MY NEW KK!!! My new KK just arrived! I lured 5 of my biking buddies over to assist in lifting off the pallet with home made chili and an IOU for future grillin's. I'm a detail guy and I think I've met my match in the detail Dennis goes to. My biggest a concern was not wiring a small fortune to Dennis, it was in the KK getting half way around the world without damage. I'm happy to report that the color was correct and the unit was in perfect condition. Not by accident I might add. The crating design and quality was top drawer. Miles of stretch wrap and hundreds of nails kept it all safe and sound. Icing on the cake was the rope installed around the legs to assist in lifting. Fortunately the excitement and muscle power eliminated the need to remove the top before pulling off the pallet base. Less than 24 hrs after delivery it has grilled a tasty BBQ chicken meal with plans for more creative eats this weekend. The fun has begun!

    Covering your KK

Re: Covering your KK My KK just arrived yesterday....yes it will be under cover if I can endure my brides disapproval! The cover was ordered and arrived before I even got the KK. To each his own. I live in TX where rain is as common as an honest politician but I want to keep that spankin' new look. All my stuff is treated this way and when it comes time to move something on eBay it goes quickly for top buck.....no plans of selling the KK but you get my point. Did I mention that I sold my old RJ Kamado to the truck driver who delivered my new KK?
