bbqfan Posted November 23, 2012 Report Posted November 23, 2012 Was cooking a Turkey at 300F and the thigh reached 170, then I dropped the BBQ temp to 125 (to buy myself sometime) and came back 20 minutes later and the thigh was as 168F. Should I believe the initial 170F reading or sit down and wait another 30 min until it reaches 170 again?

bbqfan Posted December 1, 2012 Author Report Posted December 1, 2012 Re: Turkey Temperature drop? Thanks for the reply. Is this a known issue with reducing the temperature in a BBQ or ovens?
tony b Posted December 1, 2012 Report Posted December 1, 2012 Re: Turkey Temperature drop? Since you lowered the grill temperature below that of the bird, the heat transfer reversed and that's why the thigh temp dropped. Heat is like water, wants to flow "downhill" - from high to low.
