normstar Posted May 24, 2015 Report Share Posted May 24, 2015 Hey all, Decided just now at the last minute to smoke some Butt today. Has anyone tried the Hot and Fast technique with a Butt? If so what time/temp? I'm also going to see if I can't trim it down or perhaps only cool half. Greatly appreciate any thoughts or suggestions! Happy Memorial Day. GoFrogs91 Posted May 24, 2015 Report Share Posted May 24, 2015 Normstar -WARNING!!!! If you have sugar in your rub, don't go over 325. It will scorch around 350 or so. CeramicChef Posted May 25, 2015 Report Share Posted May 25, 2015 normstar - I have done butts at 275-300 without problem. It powers right on through The Stall and is done in half the time, usually. Brisket likes hot and fast as well. The guy around here who is the Hot and Fast Guru is Robert, aka 5698k. That how he cooks the majority of his butts and briskets. My wife, well really the kids, foiled my plan so it didn't happen. But I plan on trying this technique very soon with some Cooks Pigs Pork!
