Great cook. cooking for 30 is a big task.
I have taken some thermal pic's of doing pizza as well. It is amazing to see how cold the KK is even after running at temps for ages.

Congrats on a good "Hard" cook. A brisket is easy to get wrong and i am always surprised on how quick things cook on the KK.
Glad it worked well and looked great.

CGL it was just de-boned, rubbed and cooked. It was a basic rub (Jeff's from smoking meat.com).
The other thing was try to get it in the fridge at least one day before to let the rub flavor the meat.

Was my cook. It was 20 lb and then stuffed with 2 boston buts to help make sure that it cooked evenly.

ooohhh cgl i did a suckling pig for new years eve. de-boned it and then stuffed back up with pork buts to make sure that it was a consistent thickness so it would all get cooked about the same time.
I now have twice as many people wanting to come to this new years eve...

We have the Sungold cherry but not quite yet. Also chocolate cherry, a late season that we cant remember and a dwarf egg plant. First of the egg plant should be in a couple of days. The garlic is nearly ready.

My 23" is just on our tiny concrete pad / back yard. I can roll astro fine but it dosnt get moved that often.

I have been through a couple of them now.
They wear pretty quick but make it look nice and clean. Like MacKenzie mentioned they do leave a fine powder that i normally clean off with a rag and then olive oil the grates.
But they are good.
