  1. That black handeled one is a fantasy knife, made by a pretty famous knife maker. He told me he would never make another one because he cut his  hands badly while filing those hooks and points. It’s just a fun knife. I really havent collected any knives in years. Like you Tony I’m into kitchen knives now. 

    Tony I went to the web site and like you said just a bunch of pictures. They are pretty knives though.

  2. I ordered 2 Japanese vegetable cleavers from  america’s Test Kitchen they were on sale for $69 apiece down from 95 they sent me two cases of them! Now I have over $800 worth of knives that I have to send back. They were rated the highest vegetable cleaver by ATK (see I’m learning lol). One for my daughter for Christmas and one for me.

  3. Mac hope the weather is good for the pork belly cook. Looking forward to seeing pictures. I made a spaghetti sauce on Saturday it’s the best I have ever tasted. I can’t believe how good it was. Don’t know if I’ll be able to duplicate it though it was a pinch here and a dash there. Oh well maybe the next time will be even better lol

  4. How about cross cutting through the skin and fat it will give it more area for the brine to penetrate plus a way for the smoke to get into the meat. Just a thought

  5. Sounds like it will be delicious. I’m not much help on the cook though never done a pork leg. But I’m sure someone on the forum will be able to help you. Have fun and good luck, and Merry Christmas
