  1. I got the Weston recommended above by 5968K. It does what I was looking for, quick and easy.

  4. I like to use mesquite wood for briskets...cook at 225-250 degrees...
  5. Agree with Tony b above. Plan your cook appropriately and don't use foil...if you need to speed up, increase the air flow at the end of the cook to finish...
  6. Re: Tru Tel Options** I cook steaks on my KK at over 850 degrees (on the Tru tel) 3-4 times per month and have not had any problems with the grill whatsoever. BTW, I use welding gloves to protect my arms from the heat.
