    Wow! You're brave, Tex, to have one of your first cooks be a Holiday Showcook! Not to say that your magnificent cooker cannot handle it - sure it can. I can't answer your question, but I'll cheer for you! I did a turkey one year (no roti) and it turned out great. I recommend you brine the bird. Makes all the difference in the world. Do a search on this board or out in the world for Mad Max (or Maxx - not sure). That's a great brine recipe.

    If I recall, the ever creative Cooks Illustrated did a chicken in some fabulous way, and was lamenting the flabby skin on tender meat. They did a final sear on the skin to crisp it up, and that seemed to do the trick. If I find the recipe again, I'll double check.

    Candy striper is toast. Curly's cousin is back in the pokey, I think. Gerard... well, that's kinda "need to know" information. Could tell you, but then you'd then have to hang a pic of The Hoff (in a Speedo) on your bedroom wall. Is the information really worth the price?

  7. Hi all. I wandered off and got lost in the forest. THIS CLOSE to getting eaten by bears and the like.
