First Brisket

Cooked my first Beef Brisket on my Classic KK #113. 7.5 lbs USDA Choice from Smart & Final. Cooked it at approximately 225 degrees for about 14 hours. Rubbed it down with mustard then some Harley Rub from Texas. It came out juicy and oh so tasty. I also had some chicken thighs to hold me over until the brisket cooked. My wife also loved it and she's not a big fan of BBQ.

That doesn't look like a brisket to me... maybe a mislabeled chuck roll? Or sirloin roast. Is it just wadded up??

Yeah, I was thinking the same thing. Looks really delicious, but doesn't look like a brisket. More like a roast of some sort, maybe eye round roast or similar?. Brisket flats are thin and have a uniform, single direction grain pattern.

The angle of the picture makes it look like a roast. I should have shot the photo from the front. It is actually flat. I should have trimmed off more of the fat, it was almost 1/2 thick.
