Flank Steak

I wasn't going to post any pics of tonights cook since it was just a simple flank steak with some DP Cow Lick on it. But once I started slicing it after its rest I thought it was a good example of the advantage of ceramics. How often do you see well done steak this juicy? ( I know I like my steak rare myself but the wife and daughter want no pink in sight, so when we do flank we compromise, cook it their way.)

I think I'd have cut the uncooked steak in two pieces, then done one pink for myself, and one grey for the ladies. But you chose well if you were going to have just one slab. :wink:

Counting this time? Once. VERY impressive for a steak that's burned to a crisp! :D

I'm very glad my wife likes her steaks done about the same I do - compromising to a more medium rare rather than a rare is much easier to do.
