But once I started slicing it after its rest I thought it was a good example of the advantage of ceramics. How often do you see well done steak this juicy? ( I know I like my steak rare myself but the wife and daughter want no pink in sight, so when we do flank we compromise, cook it their way.) VERY impressive for a steak that's burned to a crisp! I'm very glad my wife likes her steaks done about the same I do - compromising to a more medium rare rather than a rare is much easier to do.
