slu Posted November 8, 2010 Report Posted November 8, 2010 I purchased a Prime NY strip at Costco. Wet aged it for 14 days, then dry aged it (wrapped in cheesecloth) for another 7 days. Reversed seared it at 700 degrees. The meat was, modestly speaking, incredible! Quote
Conodo12 Posted November 8, 2010 Report Posted November 8, 2010 Re: Another NY Strip I'm sure you are right as you purchased the meat, but that does not look like any NY Strip cut that I have ever seen... closer to RibEye or a roast. Just the same, the cook looks amazing and I'll bet it tasted just as good!! Quote

I trimmed the bottom edge of all the fat, and I also incised the fascia strip on the top side which all made it rather rectangular in shape. Quote

DennisLinkletter Posted November 9, 2010 Report Posted November 9, 2010 Re: Another NY Strip As delicious as that looks... It would have some amazing sandwiches! Killing me.. Great job.. Quote

There it is, mystery solved! Also, I have to agree with Dennis - I would have overindulged with the meat hot off the KK and then made sandwiches with the leftovers - I can taste the steak with brown spicy mustard and a touch of horseradish sauce now!!
