Once you learn the basics of draft control and heat soaking (which takes 3 to 5 cooks), you will be cooking like an oldtimer. Even your mistakes will taste absolutely splendid.

Tri tip tonight was the best I have had. I bought mine with the side table/cabinet: wouldn't be without it. A working surface, plus I can keep everything connected to the KK in it, including my Weber chimney - all tidy and handy.

We never use our Rotisserie, if you want to test drive it. I was going to sell it for a pittance on the forum. Our chicken keeps getting better, other ways. (Don't chase the High Temp God.
