Awfully good if you stuff with jalapeno and cream cheese, wrap in bacon and skewer... hit with a bit of your favorite hot n sweet rub. Cook indirect at 400 ish? Haven't done this on my KK yet, but on my Profire I run about 8 mins a side on med flame. I need to play with this next weekend as my teaser and post pics Hungry now... Time to go take off brisket..

Slice down both sides of the breastbone, a slice of jalepeno on one side, a slice of smoked sausage on the other, cream cheese on the back, wrapped in thick bacon, and grill over direct heat untill the bacon is done enough to eat. Not too bad!!

mguerra Posted August 20, 2012 Report Posted August 20, 2012 Re: Dove Season coming up! The jalapeno, cream cheese bacon wrap method is the standard here in south Texas. Some folks also do an overnight marinade with orange juice as the base, and your choice of spices.
