Hi All,

I'm curious how you do your ribs? Do you do a 3-2-1 method or 3-1-1 or no foil at all??

Reply with your technique especially if you've won Memphis in May or some other big event :lol:

About 6 hours at 225'ish. No foil. I've had great success with direct on upper grill, great success with indirect on lower grill. I foiled once and I couldn't pick the ribs up they were so fall-off-the bone. They tasted great, but I really like them a little more able to cut with a knife.

I usually don't sauce while on the grill, but tried that once and really liked it. I've got 4 racks of baby backs that I bought at 3.99 lb on right now. I will sauce them 4 times starting in about an hour. Company will be here at 5ish.
