EGGARY
Sorry this isn't a KK post. I bought a Whyntee Ice Cream Machne and wanted to break it in. We made Strawberry Ice Cream. I followed a recipe for Frozen Custard. I puréed Strawberries and added it to the Custard. Then put it in the Machine. After the ice cream was done churning in the machine I mixed cut-up strawberries in the ice cream. Then into Freezer to hardened. The ice cream tasted great. The only issue was the bits of Strawberries were frozen. What is a good way to add the Strawberries/Fruit to ice cream ? Mascerate with sugar ? Do not know. Thanks. CeramicChef
Eggary - the problem is that the strawberry chunks freeze had and you have trouble scooping out the ice cream. I, like you, love fruit in my ice cream! I tend to dice my fruit, macerate with sugar, and then freeze. I've found for me about a 1/4 dice on the fruit works wonderfully. All it really does is reduce the size of the problem.
tony b
I have the small Cuisinart machine (pre-freeze containers) and I've found that halving them and macerating in sugar, then a quick pulse or two in the food processor works well. Still nice bites of berry, but not "ice cubes." Works for peaches, too!
