I think all US Lamb is technically mutton..   In the US a rack is 3.5 - 4lbs.
 The biggest AU ones the high-end restaurant distributors sell here are 1 kilo or 2.2 lbs.

Pretty much lamb is under one year old then it goes hogget then mutton as we know the older the beast the less tender it is and slow cooking helps if you really want to have that great tender lamb taste you want spring lamb 3 months and younger oh yeah its small but yum size does not always count

Owensboro and Pikeville Kentucky and probably other parts of the state mutton is BBQ more than pork or beef, heck even in Evansville IN where I have family they eat mutton a lot!
