Foil will easily burn when it is close enough to a hot flame, e.g. when trying to get get a kamado up to temp for high temp sears, for quick pizza cooks, etc. I don't know aout the toxicity do Aluminum, but I don't use it in high temp applications. tony b Posted March 27, 2017 Report Share Posted March 27, 2017 It will protect the meat from the direct infrared cooking, but it doesn't have the heat insulating properties of the ceramic HD. I just use the drip pan that came with the KK as my deflector or aluminum foil on the lower grate for some low & slows that don't drip much fat.
