Hi, I am planning on doing some butts for the guys at work. We're all pitching in and I'm curious how much pork I need per person so I can buy the correct amount. I don't want to run out. We're just going to be having pulled pork sandwiches and slaw. Thanks! Joe

Any first impressions of the new extruded charcoal?

I did, thanks!!! -
I agree it's corny and I would never buy one but I bet after a while you could make some killer pizza with that thing. I have to defend WS though. Their prices are INSANE however their customer service is beyond reproach. I have bought some stuff I Wasn;t happy with and they definitely made it right. I like the place. I'd like it a lot more if I won the lottery though

Cool! Thanks for the responses. I'll see what Costco has to offer.

Hi, I want to get in on the chuck roll thing but my local Costco doesn't carry it so I'll need to go to my butcher. When I go in there what do I ask for so I don't look like a goof or get the wrong cut? Thanks a ton! Joe

Hey that's what I was going to tell you to do

Should last a few weeks anyway

I did a low and slow yesterday and the lump performed flawlessly. Great flavor too but it's not good for high heat, too much popping. I'll buy it again for the low temp stuff though.
-
It only pops until its up to temp....... {edit}I did another high heat cook tonight, chili lime shrimp (damn those were good). Anyway, I found that this lump burns hot as hell but also the popping continued even though most of the coals were lit. I had to be careful with the air supply. If I tried to go to hot too soon it would pop and drop ash on my shrimp is not tasty. Other than the popping it has great flavor and nice size chunks. Maybe it won't pop on low and slows.... Is there a way to stop the popping or is it just me??

Here is a photo of the bag, and their website, http://www.originalcharcoal.com/index.asp 30 cents a pound isn't too shabby. It cooked up nice but popped more than my usual lump (I was grilling). Still for the price I'll put up with the popping

Hi, I was at Costco today and saw two 10lb bags of lump for $6. I picked up 4 bags (8 total) and brought it home. I figured how bad can it be for the price. I put some in my modo and holy shiznit, this is nice stuff. Nice big hunks. I'm lighting it now and will let you know how it cooks. Joe

No problem. My current neighbor is an @$$hole so I'll buy the beer for the first 6 months.

It does not have a C02 system so those kegs won't work with it. I tried a Vinotemp unit that uses C02 or can use a pressurized keg like the Heineken. I tried two of those and they were JUNK! The build quality is nowhere near that of the Krups (I swear I never thought I'd hear myself say that) and I could pee harder than what would come out of the keg. It's a very poor design. The beer would literally trickle out and was white because it was all foam. The other drawback to the C02 type kegs is they won't stay fresh for very long so you have to consume them. I watched the Avanti video and it's the same as the Vinotemp unit.....

Clearly I'm not a beer snob.

Wow, that's quite an in depth explanation.

A big drinker I am not. I agree for someone who's really into their beer it's probably not the greatest. I will say though the manual suggests an 8oz glass. Their reasoning is the beer stays colder and fresher. Makes sense. to me. Reminds me when my mother used to say "you can have more once you finish what you have"
-
Yeah, the kegs are 5L or about 14 beers. You can put the keg in warm but it takes hours to chill. It's best to put them in cold. I'm not a huge drinker but I like this kind of stuff for parties. I have a Jimmy Buffet Margaritaville too and I rarely have frozen drinks but when we have company they love it.

Ok, I picked up a Beertender the other day before a BBQ party. It was a HUGE hit. We polished off 4 kegs before the night was done Could have killed more but I didn't have anymore (bad host). I never thought we'd go through that much but the beer is so cold and delicious it's hard to not drink it. Once you "tap" the keg it stays fresh for 30 days. The digital display counts down the days, gives you a level of how much beer is remaining and allows you to adjust the tempersture (36, 39, 42f). It is expensive ($300) but I think it's worth it especially in the summer. Currently the only beer available is Heineken and Heineken Light. I enjoy boith beers so it's oK for me but I'm hoping other manufacturers will jump on the bandwagon. It's a great idea. I should note that the keg doesn't have the skunky taste of Heineken in the bottle for whatever reason. The Light is a great beer for summer. Very crisp and refreshing. People who hate Heineken were drinking it like water. This thread is useless without pics so.............

I have and they are quite tasty but a PITA to order. Not that they're any more difficult than any other website but rubs are an impulse thing for me...... I like to get a really crispy skin so I have to be careful what rub I use so I don't burn it.

Hi, I usually keep it simple (salt/pepper) when using the roti but I was curious if anyone has a good recipe for chicken. Thanks, Joe
-
Sounds good. I'll give it a shot. I usually pull mine at 195. Is 190 good enough?
-
Hi, I usually do my pok butts boneless but was curious if having the bone in makes a difference. Any ideas? Thanks, Joe

It's a Jade coktop with a Dacor downdraft vent mounted behind. It raises and lowers as you need it. As you see it it's down. Really happy with both. The cooktop is stellar and very powerful
